Given all the names listed in the Encyclo-Speed-ia, if this boss was in the final game, its name would have been "Egg Springer"

Okay, hear me out:
What if this boss was meant to be for Spring Yard Zone/Sparkling Zone, whilst the Spike boss was meant to be for Labyrinth Zone.
Considering that the bosses in this game all revolve around level gimmicks in the zones, it would make sense for the Spike boss to be in Labyrinth Zone, considering that the zone is full of them. As such, this unused fight was probably meant to be used in Spring Yard/Sparkling, as that zone has tons of springs scattered around.
Just my plausible theory on this.

This boss most likely would behave like the one seen in the Mobius Evolution hack on the first zone, since it involves Eggman jumping a spring.

I said this before on Discord, but I'll say it here too:
I speculate that Eggman would fly above Sonic, and the spring would likely prevent him from hitting Eggman from underneath, after a while, Eggman would then drop down and start bouncing, allowing Sonic to hit him

i remember one of the 8-bit Sonic games having a boss just like this,i just don't remember witch and if it even was in any of them
