The guide's spread across the last three issues, the 1999 ones. It is in Dutch, though, so you'll have to translate it using a mobile app or something (which is what I did). Also, it's based off an earlier version of the game, so (for example) a few of the unused items are mentioned in it.

As far as I can tell, no, but the (semi-)official CD-i magazine guide picks up the slack and names nearly every enemy in the game. It gives exact coordinates too, so there's no ambiguity whatsoever. If I ever get around to the enemy sprites, I'll list them with the proper names.
(Which reminds me, I need to update some of the Animation Magic Zelda character/cutscene rips' names to reflect recent discoveries there (Hungry Girl's actual name is Makoto, Crone's is Zorga, and so on))

So I've heard that this game has a lot of unused audio and/or text things. Any of them give the remaining enemy names?

Considering that apparently this game is even worse than the other two Zelda CD-i games, I'm not surprised that it didn't reach the same legendary meme status as those games.

Do note that due to emulation limitations, this is pretty much all I'm able to rip from Adventure for now. That being said, somebody has found a way to rip all the maps and sprites from the game's data (no cutscenes, though), so I'll take a look at that later.
